First courses with meat sauce, polenta, grilled meat, buffalo stews and medium aged cheeses. Serving temperature 16/18° C.
Climate:
Puglia has a Mediterranean climate with warm summers, mild winters and quite little rainfall. The number of sun-hours ensures that the fruits grow well during the summer months. The relative humidity can increase significantly in the autumn.

Red land rich in organic substances.
Vinification:
Hand harvest of the dried grapes on the plant, long fermentation with maceration at controlled temperature, then maturation in steel tanks.
